This is no ordinary baked overnight French toast recipe. Instead of using stale French bread, or slices from a loaf, this recipe uses bagels! For Independence Day this year I ordered bagels from “The Bagel Nook” in New Jersey. Normally I would just grab a container of plain white bagels from the store but The Bagel Nook does the cutest seasonal bagels, to which these happened to be red, white and blue tie dye. I love buying fresh ingredients from around the US from Goldbelly as a way to spice things up, and I just had to have these. The fruit I chose when I made this was blueberries and strawberries just to keep with the patriotic vibe, but you can really use any of your favorite fruits that bake well.
Overnight Bagel French Toast
This is a great way to use up those bagels that you just didn't get around to eating while they were soft, or the perfect recipe if you like a bit more substance to that normal French toast recipe you are used to always making. This effortless recipe feeds a handful, and is a great take on an amazing classic dish!
Ingredients
- 6 bagels (plain or sourdough), cut into cubes or slices
- 1-2 c. sliced strawberries
- 2 c. blueberries
- 8 eggs
- 1 3/4 c. milk (2%)
- 1/4 c. maple syrup
- 1/4 c. sugar
- 1 tsp. vanilla
- 1 tsp. cinnamon
Instructions
Spray a 9x13 baking pan with non stick cooking spray and set aside. Slice the strawberries discarding the ends, and set aside. Layer the pieces of cut bagel throughout the pan, trying to make an even layer. Add the strawberries and blueberries on top. In a large bowl, whisk the eggs, milk, maple syrup, sugar, vanilla and cinnamon together and pour over the bagels. Cover the pan with foil, saran wrap or a fitted lid and place in the fridge for at least two hours (I always let them soak as long as possible, so usually overnight).
Preheat the oven to 350 degrees. Remove the cover off of the pan and cook in the oven for 50 minutes, checking with a toothpick or fork to make sure the egg mixture is fully cooked. Wait at least ten minutes to slice and serve.
Notes
My bagels were purchased through Goldbelly from The Bagel Nook, out of New Jersey. Any bagels, such as plain, cinnamon raisin, sourdough, wheat, whatever flavors that you usually purchase would go great in this recipe!
