Slow Cooker Chicken and Veggies

During this quarantine, who doesn’t need an easy slow cooker recipe? This chicken dish is packed with flavor and uses minimal ingredients. Which leaves you time to do whatever it is you are able to pass the minutes, hours and days away.

Easy slow cooker recipes make life easier. This chicken recipe is packed with flavor, fork tender, and is very filling. It makes 6 chicken breasts, but they cook down smaller so the serving size can be for less amount of people.

Ingredients

  • 2 c. baby potatoes (red or mixed)
  • 3 large carrots, peeled, cut lengthwise, and into carrot sticks
  • 6 boneless skinless chicken breasts
  • 4 Tbs. butter
  • 1 small lemon, juiced
  • 2 garlic cloves, thinly sliced
  • 2 tsp. Italian seasoning
  • 1 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1/2 c. grated Parmesan

Instructions

Place the potatoes and carrot in the bottom of a slow cooker. Place the chicken in an even layer on top of the vegetables. In a small saucepan, combine the butter, lemon juice, Italian seasoning, salt and pepper together until the butter is melted. Sprinkle the sliced garlic on top of the chicken and pour the sauce on top of the chicken breasts. Cook on low for 4-5 hours until the chicken is fork tender. Place into serving bowls and top with some of the broth and grated Parm.

Notes

If you do not have a fresh lemon available, use 2 tsp. of bottled lemon juice. If you still don't have lemon juice? You can omit it completely. It will just take the tangy aspect out of the dish.
