This refreshing take on fruit pizza is not only patriotic, but carb conscious. Holidays get chaotic with the guest list number constantly changing, and all of the massive amount of food that is needed to feed a hungry crowd. This fruit pizza recipe is great because it can easily be multiplied and put together in 5-10 minutes!
Patriotic Watermelon Pizza
- 1 Large Watermelon, preferably seedless
- 1 Large carton Vanilla Yogurt (or Greek, if you are into that)
- Block of White Chocolate (any kind of good quality, do not use almond bark)
Slice the large watermelon in half, very carefully, through the middle. Cut the watermelon into 1 inch thick round slices and set on a serving tray. Spread a thin layer of the yogurt leaving at least a quarter inch of the pink of the watermelon showing. Scatter the top with blueberries, and using a vegetable peeler or cheese grater, grate some white chocolate curls on top. Slice into 6-8 "pizza" slices.
It is hard with this recipe to choose the serving amount. It all depends on how much of the watermelon you want to make up into these fruit pizzas!
