BBQ Roasted Potatoes

Oven cooking in the summer can be such a pain, especially when the days can reach over 90 degrees. This is one of my favorite potato recipes to make for a BBQ because they can be made the night prior and reheated in the microwave! Your guests will thank you because your house won’t feel like it is literally and metaphorically on fire. And their mouths will thank you because they taste so darn delicious!

Prep Time: 10 minutes Cooking Time: 40 minutes

  • 10-20 small red potatoes, quartered all to the same size
  • 1 Tbs. olive oil
  • 1 Tbs. chili powder
  • 2 Tbs. brown sugar
  • 2-3 tsp. garlic salt

Preheat the oven to 425 degrees. In a large bowl combine the red potatoes, oil, brown sugar and seasonings until everything is well mixed. Spread out on a cookie sheet lined with foil and non stick cooking spray. Make sure no potatoes are overlapping. Roast for 20 minutes, stir on the sheet, and continue to cook for 20 more minutes. Check with a fork to make sure they are cooked all of the way through.

You could use any type of potatoes for these, just make sure you cut them into 1 inch cubes or around that size.
