Summer always goes by way too fast. I always get excited for all of the fresh produce that becomes available. The only problem is that the weeks go by so quickly I barely have any time to experiment! Watermelon is one of those fruits that I never really used to get into. The only fun part was spitting seeds at your siblings while growing up. It’s water content for me was always unappealing to bite into.
Lately I have been trying to pair watermelon with savory dishes like salads, sauces or served with meat. These small appetizer bites are perfect because they combine the sweet watermelon with the salty feta, and are topped with tangy balsamic. This would also be perfect as a side salad all chopped up and mixed together!
Watermelon Feta Bites
Perfect refreshing appetizer bites with a zing!
- 2 cups cubed watermelon (I made mine more rectangular for visual reasons)
- 10 large basil leaves (minimum)
- Block Feta
- Balsamic Reduction (white or normal balsamic)
Drizzle your serving tray with a small amount of the balsamic reduction. Cut the block feta into thing rectangles, smaller than the size of your watermelon pieces. To assemble these cute bites, place your watermelon cubes on the serving tray. Add a slice of feta, some fresh basil, and top with a dot of balsamic reduction.
This recipe is hard to decipher as far as ingredient amounts. You can always make the feta smaller, use more or less basil, and add more or less reduction. It is a very versatile recipe.
